Vanilla Espresso Rice Krispy Treats

I had a whole box of Brown Rice Krispies in my pantry, and I thought… Rice Krispy Treats! Then I thought, how could I make these a little different than the original rice krispy treat? I could use some almond butter – vanilla espresso almond butter! I added some vanilla coffee creamer and WAH-LAH… Vanilla Espresso Rice Krispy Treats!


  •  6 tablespoons (3/4 stick) butter
  •  1/3 cup vanilla espresso almond butter
  •  2 tablespoons vanilla coffee creamer (I used Califia)
  •  4 cups marshmallows
  •  1 cup mini marshmallows
  •  5 cups brown rice cereal


In a large pot, melt butter, almond butter, and vanilla coffee creamer together until smooth
Add regular-size marshmallows
Stir mixture until smooth and marshmallows are melted and incorporated with butter and almond butter
Add brown rice cereal, one cup at a time to make sure everything gets coated
Add mini marshmallows and mix until evenly incorporated
Line a 9x9 pan with wax paper
Transfer krispy treats to the pan, pressing down until the pan is filled and top is flat
Refrigerate for about an hour to se
Remove from the fridge and cut into squares
Serve and enjoy!
