One of the things I love most about summer is BBQing and eating outside! There's something so fun and relaxing about cooking and eating alfresco on beautiful, warm summer nights! When it comes to the food I like to grill, I'm all about skewers. Whether it's fish, chicken, beef or veggies, eating anything on a skewer is the way to go! I came up with this Thai inspired sauce to combine my love of Thai food and grilling. It's the perfect combo of creamy peanut-y goodness with the zing from the lime juice and hot sauce. I brushed this onto chicken skewers, but feel free to use it on whatever you are grilling. I imagine it would also make a great sauce for rice or rice noodles!

Thai Peanut Sauce
1 cup Wild Friend Classic Creamy Peanut Butter
1/2 cup coconut milk
1/4 cup water
Juice from 1 lime
3 tablespoons soy sauce or coconut aminos
1 tablespoon fish sauce
2 tablespoons hot sauce
1 tablespoon freshly grated ginger
2 tablespoons garlic powder
1/4 cup chopped cilantro
a pinch of sea salt and black pepper
In a bowl, combine all ingredients, besides cilantro. Whisk until smooth. Mix in the cilantro right before serving.
Brush on top of grilled protein or veggies after grilling. Use the extra as a dipping sauce!
