I'm one of those moms who doesn't say no to the kids when it comes to pancakes. I make pancakes at least twice every weekend at my kids' request--why not if they're made with wholesome, nutrient rich ingredients right? (and I, of course, always get excited about pancakes too!). The kids love getting involved in the kitchen--whisking eggs, cutting fruit and anything else they want to help me with--it's always so fun!
I have a few favorite recipes that I rotate, and I'll share one today with you guys: Oatmeal-Buckwheat Almond Butter pancakes that are sweetened with honey and coconut sugar. They're dense, fluffy and simply delicious!
ingredients:
½ c oat flour
¼ c plus 1 tsp buckwheat flour
1 ½ tbs coconut sugar
1 tsp baking powder
1/3 c almond milk
1 tsp honey
1 egg (separated)
1 tbsp coconut oil, melted and cooled
a pinch of salt
Directions: Mix together the oat flour, buckwheat flour, coconut sugar, salt and baking powder in a medium bowl and set aside. Separate the eggs, and then in another bowl, whisk together the almond milk, honey and egg yolks in until combined.
In a third bowl beat the egg whites until stiff peaks form.
Add the wet mixture to the dry ingredients and mix until just combined. Gently fold in the egg whites, and then the coconut oil. Mix until the batter is just smooth and let rest for 10 mins.
Spoon batter onto hot griddle, lightly greased with coconut oil. Spread batter slightly (batter will be thick) and cook until lightly browned on each side. Drizzle with Wild Friends new Super Almond Butter, add some blueberries bananas and enjoy!
