French Toast brings me back to my childhood. It was one of my favorite dishes shared at the table when I was growing up. When I started becoming more serious about my health and fitness, protein french toast became one of my favorite recipes. Typically french toast is low in protein, however, my recipe contains protein powder and collagen peptides, which helps repair muscles after a workout and also keeps you feeling full and satisfied. One of my favorite protein french toast toppings is the new Wild Friends Peanut Cashew Super Butter. The Super Butter can either be drizzled on top of the french toast or mixed vanilla yogurt to make the tastiest french toast dip! Hope you enjoy!
Ingredients:
Makes 3 slices of French Toast
• 3 slices Ezekiel cinnamon raisin bread
• 1/2 cup egg whites
• 2 tbsp cinnamon protein powder (vanilla tastes great too)
• 1 tbsp collagen peptides
• dash of cinnamon
• 1/4 cup cashew milk
• 1/2 cup vanilla yogurt
• 1 tbsp Wild Friends Peanut Cashew Super Butter
• blackberries
• strawberries
Directions:
In a large bowl, stir together the egg whites, protein powder, collagen peptides, cashew milk, and cinnamon. Soak the slices of bread in the egg mixture, making sure to coat both sides. Next, heat up a pan on the stovetop with coconut oil. Place the coated bread slices onto the pan and cook until golden brown on both sides (about 3-4 mins per side). Place the peanut cashew butter in the microwave for 20-30 seconds until smooth and melted. Pour the cashew butter on the toast, add yogurt, and desired amount of berries! Enjoy :)
