When someone asks me what my favorite food is, my answer is toast with no hesitation. This response is usually followed by a questioning look, but rightfully so. He/she who asked the question is probably envisioning a toasted piece of wonder bread with some sub-par margarine slathered on top. That’s not how I toast.
For me, toast is a blank canvas on which I can make my creative foodie dreams come true. Whether it’s my go-to thick slice of sourdough with Siggi’s plain skyr/sliced avocado/soft boiled egg toast or just simply almond butter and banana slices on sprouted bread, toast will always hold a special place in my heart (and my stomach for that matter). In honor of my unconditional love, here is a recipe for my new favorite summer toast variation. I hope you love it as much as I do!
2 slices of your favorite bread (I use a seedy variety from the farmer’s market)
1 container vanilla Siggi’s yogurt
2 tbsp Almond Cashew Super Butter
hemp hearts for topping
1.Toast the bread, and top with two large spoonfuls of skyr on each slice. You might have extra yogurt leftover, but I find that the leftover spoonfuls always make for the best snack while capturing pictures of your finished toast product. ;)
- Place a tablespoon of Super Butter on each slice of bread and use a toothpick to swirl into the yogurt.
- Align strawberry slices across each piece of toast and top with hemp hearts. Take an Instagram worthy picture, then DIG IN!
