If you've got a sweet tooth but want to indulge in something healthier than the candy bars you grew up with, these are for you! These little gems are gluten & dairy free, refined sugar-free and most importantly DELICIOUS! They're protein packed thanks to the nuts, have a nice dose of antioxidants thanks to the dark chocolate and have a boost of collagen from Wild Friends Collagen Nut Butters. They might just be your new favorite dessert.
Raw Chocolate Peanut Butter Truffles
Recipe inspired and adapted from Rachael DeVaux of @rachaelsgoodeats
Ingredients
Base Layer
- 1/2 cup almonds
- 1/2 cup cashews
- 1/2 cup peanuts
- 2 tbsp maple syrup
- 1 tbsp water
- 1 tsp cinnamon
- 1/2 tsp ginger
- 3 tbsp hemp seeds
- Pinch pink sea salt
Filling
- 3/4 cup Vanilla Collagen Peanut Butter from Wild Friends
- 1/2 cup melted coconut oil
- 2 tbsp maple syrup
Chocolate Coating
- 3.5 oz dark chocolate
- 2-3 tbsp coconut oil
- Sea salt
- Pumpkin seeds
Directions
- Pulse all the base layer ingredients in a food processor until a dough like consistency forms.
- Press into the bottom of a loaf pan lined with parchment - you can spray/rub coconut oil in the parchment paper to make them even easier to pop out at the end. Place in freezer for 10 minutes and make filling.
- In a small bowl combine the ingredients for the filling and microwave for about 20 seconds. Mix together and then pour onto the base layer. Set back into the freezer for an hour.
- Take the loaf pan out of the freezer and cut the loaf in half, then inch strips and then into squares.
- Melt the chocolate and coconut oil together and gently dip each square into the chocolate and set aside. Sprinkle on sea salt and pumpkin seeds.
- Freeze for 1-2 hours. Enjoy!
