Pumpkin Spice Peanut Butter Bread

It's that time of year again...PUMPKIN EVERYTHING!!! AKA my favorite season! I look forward to all the wonderful holiday festivities and the delicious baked goodies. So today I thought it would be fun to share with y'all a peanut buttery pumpkin spice loaf, that's so tasty, you won't even believe it's healthy enough for breakfast...paired with a pumpkin spice latte, because one can never have enough pumpkin, am I right??! IM RIGHT.️ Did I mention it's also super easy!?! win-win! I'm a sucker for any type of crumble, so for this particular loaf I blended up a couple of my favorite protein bars (@gomacro thrive coconut caramel bar) with 2 tbl coconut oil and sprinkled it on top 20 minutes before my loaf was finished baking, but I'm going to also share with you guys my favorite pecan crumble that takes this loaf to the next level! Alright here's the deets:

1 cup organic pumpkin purée
1/4 cup pure maple syrup
3 eggs
1 tsp vanilla extract
1/2 cup Wild Friends Pumpkin Spice 
1/4 cup coconut flour
1.5 tsp pumpkin spice
1/2 tsp baking powder
1/2 tsp baking soda
4 tbl ghee
2 tbl almond flour
2 tbl coconut sugar
1 tsp cinnamon
1/4 cup crushed pecans
Preheat oven 350
In a large bowl, add pumpkin, maple syrup, eggs, vanilla, and PB. Next, in a separate bowl, mix together coconut flour, pumpkin spice, baking soda & baking powder. Mix dry ingredients together in a separate bowl. Combine dry and wet ingredients together and mix well. Pour batter in a greased baking loaf lined with parchment paper.
Too with pecan crumble and bake for 50 min. Lay on wire rack to cool... DEVOUR!
