I took my Pumpkin Bread to another lover level by adding Wild Friends Pumpkin Spice Peanut Butter. My husband suggested we eat dessert before dinner (I always thought the kids were supposed to do that!?) Added bonus: the whole place smelled like pumpkin spice!
To make your home smell like Pumpkin Spice, do this:
Combine the following ingredients & beat at medium speed for 1-3 mins:
2/3 c coconut sugar
1 C. cooked pumpkin/squash
1/3 C. @chosenfoods avocado oil
2 tbsp @wild_friends pumpkin spice PB
1 egg, 1 egg white (you may sub for flax egg)
In a separate bowl mix the dry ingredients:
2 C. spelt flour (I love using oat flour too!)
1 1/2 tsp. baking powder
1/2 tsp. pink salt
1 1/2 tsp. cinnamon
1 tsp pumpkin spice
1/4 tsp. nutmeg
1/4 tsp. ginger
-Add dry ingredients to the pumpkin mixture. gradually blend in 1/4 C. almond milk.
-Add nuts, if desired (I love pecans and walnuts)
-Pour into a greased loaf pan and bake at 350 for 50-60 mins.
Immediately remove from the pan and cool on a rack.
Enjoy toasts with yogurt, more nut butter 💁🏻 or ghee butter!🤗
Note: Canned Pumpkin works too! Make sure it’s not to confuse it with canned pumpkin pie, (although it probably would be good 😜)
