Peanut Butter Cookies

The only thing better than fresh warm PB cookies are warm PB cookies studded with melted, gooey chocolate chips.  Am I right, or am I right?

 

 

These Chocolate Chip PB Cookies are gluten/dairy/soy/and grain-free, and a cinch to make.  They go great with an almond milk latte in the morning or as a little after-dinner treat. But go ahead and make a double batch while you’re at it, because they won’t last long!

 

Ingredients:

 

Directions:

  • Preheat oven to 350 F.  Line two baking sheets with parchment paper.  
  • In a bowl, whisk together the egg, coconut sugar, peanut butter and vanilla; whisk well to combine.  
  • Add in the coconut flour and whisk again.
  • Fold in the chocolate chips.
  • Using a small cookie scoop, portion out the dough onto the baking sheets.
  • Very lightly roll the cookies into balls. Use a fork to press down on the cookie to make a criss-cross pattern.  
  • Bake for 10 minutes, or until the edges are golden brown. Makes about 26 half-dollar size, kid-friendly cookies OR 13 larger ones (for us big kids).
