Us too, that's why we made these delicious Mini Oatmeal Peanut Butter Bites! They are sweet, cinnamony, and our new favorite breakfast snack. Start your day off right with these yummy little bites!
- 1 cup rolled oats
- 1/2 cup almond milk
- 1 egg
- 1/4 cup Wild Friends Sugar Cookie Peanut Butter
- 1 T coconut oil, melted
- 1 tsp cinnamon
- 1/2 tsp vanilla
- 1/4 tsp baking soda
- 1/4 tsp baking powder
- Chocolate chips, optional

Preheat the oven to 350 degrees. Grease a mini muffin tin with coconut oil.

In a medium sized bowl, whisk the egg and almond milk. Add all other ingredients and stir well.

Scoop one tablespoon of batter into muffin tins and sprinkle chocolate chips on top of batter.

Bake for 11 minutes and enjoy!
