This was actually my first time trying the Wild Friends Cinnamon Raisin flavor peanut butter… and I think I have my new favorite – besides pumpkin spice, of course! I decided to use this in mini muffins along with some added cinnamon because you can never have too much cinnamon!
Recipe:
- 1 cup whole wheat flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 Tablespoon cinnamon
- 1/4 cup (1/2 stick) butter, melted
- 1/3 cup Wild Friends Cinnamon Raisin peanut butter
- 1/2 cup coconut sugar
- 1 teaspoon vanilla
- 1 egg
- 2/3 cup unsweetened almond milk
Instructions:
- Preheat oven to 350 degrees
- In a large bowl, combine flour, baking powder, baking soda, cinnamon and coconut sugar - mix together
- In a separate bowl, combine egg, vanilla, melted butter, cinnamon raisin peanut butter, and almond milk - whisk until smooth
- Add the dry ingredients to the wet ingredients in about 3 increments, mixing after each addition - add more almond milk if batter is too dry
- Once everything is combined, fill mini cupcake liners with batter (about 3/4 full)
- Bake for 8-10 minutes or until toothpick comes clean
- Let cool and enjoy!
