Inflammation is a naturally occurring process in our body. In simple terms, inflammation happens when the body needs to heal itself – whether from injury, germs, or even a little paper cut!
Inflammation can become problematic when it decides to target its own tissues. Whole-body, low level inflammation can be brought on by a number of factors including chronic stress, low activity levels, genetics, processed foods and environmental toxins.
The good news is, is that so many delicious foods in our diet can help reduce unwanted inflammation. This recipe includes lots of anti-inflammatory foods and is the perfect lunch or side to any meal. And it has a delicious almond butter dressing that you will love!!
ANTI INFLAMMATORY KALE SLAW SALAD
Ingredients
Salad
3 cups chopped kale (leaves only, no stems)
1 tbsp lime juice
1 cup shredded red cabbage
1/2 cup shredded carrot
2 tbsp chopped cilantro
1/4 cup pumpkin seeds
Dressing
3 tbsp Wild Friends Classic Creamy Almond Butter
2 tsp maple syrup
1 tbsp lime juice
2 tbsp low sodium tamari
1 tsp freshly grated, finely chopped ginger
Directions
1. Pour lime juice over kale and massage leaves until softened.
2. Mix kale, cabbage and carrot together in a bowl.
3. Pour dressing over kale mixture. Then add the remaining salad ingredients.
4. Enjoy!
