Ingredients

2 cups rolled oats (divided)

¼ cup dried apricots, roughly chopped

¼ cup raisins

¼ cup ground flaxseeds

1 Tablespoon sunflower seeds

¼ cup shredded coconut

1 teaspoons uncooked quinoa

½ teaspoon baking soda

¼ cup honey

3 Tablespoons melted butter
Directions
1. Preheat the oven to 350°F. Coat a muffin tin with butter or cooking spray.
2. In a food processor or coffee grinder, grind one cup of the rolled oats into oat flour.
3. In a large mixing bowl, combine the oat flour, remaining cup of rolled oats, dried apricots, raisins, ground flaxseeds, sunflower seeds, shredded coconut, quinoa and baking soda.
4. Add the sunflower butter, honey and melted butter to the mixing bowl and mix with a large spoon until everything is well combined.
5. Divide the mixture amongst the muffin tin cups. Use the back of a spoon to press and flatten the mixture down in the muffin tin.
6. Bake for 10 - 15 minutes, until the edges are golden brown.
7. Let cool in the muffin tin for 10 minutes, then transfer the Aussie bites to a cooling rack to finish cooling.
