Gingerbread Streusel Donuts

These delicious donuts are packed with all the familiar flavors of gingerbread but with the added bonus of a streusel topping!

You can’t go wrong making a batch of these - I’m sure everyone would love to wake up to these on Christmas Day!

 

INGREDIENTS


Donuts

  • 2 cups flour 
  • 3/4 cup cane sugar 
  • 1 1/2 teaspoon baking powder 
  • 1/4 teaspoon baking soda 
  • 1/4 teaspoon salt 
  • 1 teaspoon cinnamon and ginger 
  • 1/2 teaspoon allspice and nutmeg 
  • 1/2 cup Wild Friends Gingerbread Peanut Butter 
  • 1/4 cup butter, melted 
  • 2 teaspoon vanilla 
  • 3/4 cup milk 
  • 2 eggs

Streusel topping

  • 3/4 cup flour 
  • 3/4 cup brown sugar 
  • 1/4 cup molasses 
  • 6 tablespoons cold butter cut into tiny pieces 
  • 1/2 cup toasted and chopped pecans 
  • 1/2 teaspoon each of cinnamon, ginger, and allspice

Glaze

  • 1 cup powdered sugar 
  • 1/4 cup milk 
  • 1 teaspoon vanilla


DIRECTIONS 


To make the Donuts:

  1. Preheat oven to 350 degrees. Grease a donut pan with cooking spray and set aside. 
  2. In a medium bowl whisk together the flour, sugar, baking powder, baking soda, salt and spice. 
  3. In a small bowl mix together the peanut butter, melted butter, vanilla, milk and eggs. 
  4. Carefully pour the wet ingredients the dry ingredients. Mix gently until incorporated. 
  5. Fill the donut pan with the dough and bake for 10- 13 minutes. Remove from the oven and let rest on a cooking rack. 

To make the Streusel topping:

  1. In a small bowl mix together all the ingredients for the streusel topping and work into small chunks. Spread on a small pan and bake at 350 degrees for 15 minutes. 

To make the Glaze:

  1. In a small bowl add the powdered sugar and using a whisk slowly drizzle in the milk until the glaze is a smooth and not too runny mixture. Be careful because you might not need to use all the milk! Add the vanilla. 
  2. Assemble your donuts by dipping the donut tops in the glaze and then press them into the pan of the streusel topping. Place on a cooling rack to set up.
