The holiday season is here and things can definitely get crazy with the hustle and bustle of holiday parties and dinners, Christmas shopping, travel and lots of fun time spent with family and friends. My calendar for December is jam packed and although I am very excited for it, this time of year can be a little bit stressful as well. Staying fueled during this busy season is so important for feeling good on the inside and out! We all need a little extra energy during the holidays and that is exactly why I always like to have some type of healthy snack on hand and stocked up in my refrigerator! One of my favorite go-to snacks would have to be -- homemade energy bites! They are so easy to make and you can pack them full of your favorite fueling ingredients.
Below you can find my tasty holiday inspired Gingerbread Peanut Butter Energy Bites recipe! I like to make these as a healthy snack to grab and go on my way out the door, perfect for before and/or after my workouts, or even as a quick dessert to bring for a Christmas gathering or party!
Ingredients:
1/2 cup Wild Friends Gingerbread Peanut Butter
1 cup old fashioned oats
1/3 cup ground flax seed meal
2 tbsp chia seeds
7-8 pitted dates
1/2 tsp cinnamon
Splash of water (to help mold bites together)
Directions:
Combine all ingredients in a food processor and pulse until blended well. Roll dough into bite size balls and place on parchment paper or a nonstick baking sheet. Next, refrigerate for 20-30 mins and ENJOY!
Store the Gingerbread PB Bites in an air tight container and refrigerate for up to 2 weeks. (They freeze well too!)
