These pancakes are made with whipped egg whites, which make them super fluffy!
They are also made with Wild Friends Pumpkin Spice peanut butter… YUM! What
could be better? Pumpkin. Peanut Butter. Pancakes. That’s really all you need.
Recipe:
1 cup Kodiak Cakes pancake mix
2/3 cup almond milk
2 tablespoons pumpkin puree
1 teaspoon cinnamon
¼ teaspoon nutmeg
1/8 teaspoon cloves
½ teaspoon vanilla extract
1 tablespoon Wild Friends Pumpkin Spice peanut butter
2 egg whites, whipped to stiff peaks
Instructions:
Combine Kodiak Cakes, cinnamon, nutmeg, and cloves together in a large bowl.
Add almond milk and vanilla and whisk until smooth.
Add whipped egg whites in about three increments, folding carefully with a
rubber spatula until combined.
Cook pancakes in a skillet until golden brown.
Serve and top with more Pumpkin Spice peanut butter and maple syrup!
