Flourless Dark Chocolate Almond Butter Cookies. These cookies prove that you don't need flour to make a delicious cookie! We were so excited to develop this recipe for people following a grain/gluten free/paleo diet! The base of the cookie is our Classic Creamy Almond Butter so you get a sweet treat with a good dose of protein. These cookies could be eaten for breakfast, as a yummy snack or for dessert!
- 1 cup Wild Friends Classic Creamy Almond Butter
- 1/3 cup honey or pure maple syrup
- 1 egg
- 1 teaspoon pure vanilla extract
- 1/2 teaspoon baking soda
- 1/2 teaspoon sea salt
- 1/2 teaspoon cinnamon
- 3.5 oz dark chocolate bar coarsely chopped and divided
- Sea salt, for sprinkling
- Almonds for topping, if desired
Preheat oven to 350 degrees F.
In a medium mixing bowl, mix together almond butter, honey (or maple syrup), egg, vanilla, baking soda, and salt until well combined. Fold in 1/3 cup of the chocolate chunks.
Drop tablespoon sized balls of dough onto a greased baking sheet. Top each cookie with extra chocolate chunks and an almond or 2 if desired.
Bake for 10-12 minutes or until cookies turn a golden brown. They will look puffy but will settle once cooled. Cool on the baking sheet for 10 minutes then transfer to a wire rack to cool completely. Repeat with remaining dough.
