Five Quick Breakfast Ideas (with 4 Ingredients or Less!)

As someone who works 9 hours a day, five days a week and is out the door by 7:30 AM, I like my breakfasts to be quick and painless This is most likely because a) my hair is acting unruly and I need the extra time to tame it and b) I am largely dependent on a bus to work that frequently leaves without me. While I prep a lot of my breakfasts the night before, there are some mornings that I forget and need to grab something quick and easy.  Luckily for me (and for you!) I have developed five breakfast ideas that you can easily throw together (with four ingredients or less!), take in your bag, and not have a sad desk breakfast. Because trust me, nothing is worse than a sad desk breakfast.

Pita + Sliced Hardboiled Egg + Jarred Roasted Red Peppers + Hummus = Sabich-ish Sandwich

This quick breakfast sandwich reminds me of one of my favorite things to eat when I visited Israel. While a Sabich sandwich typically has roasted or fried eggplant, I substituted roasted red pepper here to make this even more easy! Cut a pita pocket in half and toast over the stove for about 30 seconds (to get it nice and WARM). Spread 2 tablespoons of hummus into each half. Slice two hardboiled eggs and stuff into pita pockets. Then add roasted red pepper slices. Make sure you pat the slices dry so that they do not make the pita soggy!

Apple + Yogurt + Nut Butter + Cinnamon = Apples with Cookie Dough Yogurt Dip

One of my favorite things to eat for breakfast, snack, or anytime! The yogurt dip seriously tastes like cookie dough. Mix 1 tablespoon nut butter (I like the Wild Friends Honey Sunflower Butter for this!) with 1 container of either vanilla or plain Greek yogurt and ½ tsp cinnamon. Slice an apple for dipping and you’ve got yourself a pretty delicious breakfast that feels more like a treat.

Waffle + Peanut Butter + Banana = Peanut Butter Banana Waffle-wich

This is a major upgrade from your usual peanut butter and banana toast. The nooks and crannies of the waffle make for the ultimate peanut butter delivery system. Spread 1 tablespoon of peanut butter on a toasted waffle and top with banana slices. If you’re not into bananas, apple slices or berries work just as well!

Oats + Banana + Blueberries +Cinnamon = Blueberry Breakfast Cookies

These cookies take 15 minutes of prep the night before, but they are so easy and make the ULTIMATE breakfast treat that you can grab and go (and are more nutritious than a granola bar!). Preheat the oven to 350 degrees F and line a baking sheet with parchment paper. Mash 2 bananas with a fork, then stir in 1 cup oats. Add ¼ cup of blueberries and stir to combine. Place a teaspoon of batter on the baking sheet, pressing down slightly with the back of a spoon. Sprinkle with cinnamon and bake for 15-18 minutes, until the bottoms are brown. These store in a sealed container for 3-4 days. Spread with nut butter or cream cheese for the ultimate treat!

Crispbread Crackers + Cream Cheese + Smoked Salmon + Cucumber

Crispbread crackers are seriously my favorite things to have on hand! They act like toast without all of the huss and fuss of breaking out the toaster! That means they make breakfast SUPER easy! Spread 1 tablespoon of plain or non-dairy cream cheese on 2 crispbread crackers. Top with smoked salmon and cucumber and prepare yourself to be transported to your favorite Nordic country.
