Cranberry Almond Butter Loaf

Well hello, beautiful! This loaf is gluten-free, dairy free and refined sugar free. It’s packed with flavor and it’s simply addicting! The secret ingredient is Wild Friends Almond Cashew Super Butter which makes the bread super smooth and tasty. It’s perfect for a holiday dessert with a cup or tea, or as an easy breakfast (drizzled with more Almond Cashew Super Butter of course). You need this in your life!

Ingredients:
dry ingredients:
1/2 c gluten-free rolled oats 
1/2 c chickpea flour
1 tsp baking powder
1/4 tsp salt

wet ingredients:
2 eggs
3 tbsp vanilla ghee
1/4 c coconut sugar 
1 tsp vanilla extract
1/2 tsp cinnamon
Add-in ingredients: 1/2 c chopped dried cranberries, 1/3 c chocolate chips

Directions: 
Preheat oven to 350F and line a loaf pan with parchment paper (you can use 8-inch square baking pan for bars)

In a large bowl, mix together all of the dry ingredients. Then use a smaller bowl to mix together your wet ingredients.

Combine your wet and dry ingredients and mix thoroughly.

Add in the most of your cranberries and chocolate chips, saving some to sprinkle on top.

Pour the batter into the baking (loaf) pan. Using a rubber spatula, spread into an even layer.
Sprinkle the rest of the cranberries and chocolate chips on top
Bake for approx 25 minutes. (A neat trick is to stick a toothpick in there-if it’s done it will come out clean!)

Let cool for 30 minutes, slice and Enjoy!
