Now who doesn't love a classic peanut butter cookie? We both grew up eating these cookies so naturally they have a special place in our hearts. We made them just like our moms used to, just with the addition of our simple and delicious Classic Creamy Peanut Butter.
Ingredients:
- 1 cup unsalted butter, softened to room temperature*
- 1 cup granulated sugar
- 3/4 cup packed light brown sugar
- 2 large eggs, room temperature preferred
- 2 teaspoons vanilla extract
- 1 cup Wild Friends Classic Creamy peanut butter
- 3 cups + 2 Tablespoons all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/3 cup granulated sugar, for rolling
Using a hand mixture or stand mixture, cream the softened butter and both sugars on medium speed until combined. Add the egg and mix for about 1 minute. Next add the peanut butter and add vanilla and mix on high until combined.
In a separate bowl, add flour, baking soda, baking powder and salt. Add to the wet ingredients and mix on low until combined.
Cover dough tightly and chill for at least 3 hours.
Preheat oven to 350 degrees. Line two large baking sheets with parchment paper or silicone baking mats.
Place 1/3 cup of sugar in a bowl for rolling.
Roll dough into balls (about 1.5 TBS worth of dough) and roll into sugar. Place 2 inches apart on the prepared baking sheet. Press fork into the tops of the cookie in a criss-cross pattern.
Bake for about 10 minutes or until light brown on the outsides of the cookie.
The cookies will be soft in the middle. Let set on the baking sheet for 5 minutes.
Transfer to a baking sheet to cool completely and serve.
