Chocolate and coconut is meant to go together. Add peanut butter? Even better. Wild Friends chocolate coconut peanut butter does just that a combines all three flavors. I used this peanut butter to make cookies. They turned out soft and chewy… the best kind of cookie!
Recipe:
- 2 cups flour
- ¼ cup cocoa powder
- 1 teaspoon baking soda
- ½ teaspoon baking powder
- ¼ teaspoon salt
- 1/3 cup Wild Friends chocolate coconut peanut butter
- 1/2 cup butter (1 stick)
- 3/4 cup brown sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1/3 cup shredded coconut
- ½ cup mini chocolate chips
Instructions:
Preheat oven to 350
In a large bowl, combine flour, cocoa powder, baking soda, baking powder,and salt
With an electric mixer, beat butter and brown sugar on medium-high speed until fluffy (about 3 minutes)
Add egg and vanilla extract and mix until smooth
Add dry mixture into wet ingredients in about 3 increments, mixing after each addition
Add shredded coconut and mini chocolate chips and mix until just combined
Roll dough into 1 inch balls and place on a cookie sheet
Press the dough down with a fork
Bake for 8-10 minutes
Cool on a cooling rack and enjoy!
