These breakfast cookies are hearty, delicious and are made with our creamy, dreamy Almond Macadamia Be Well Blend!
Ingredients

¼ cup honey or maple syrup

2 ripe bananas, mashed with a fork

1 teaspoon vanilla

2 cups rolled oats

¼ teaspoon salt

½ teaspoon ground cinnamon

½ cup shredded coconut
-
¼ cup nuts, roughly chopped

¼ cup chocolate chips
-
¼ cup dried fruit, roughly chopped
Directions
1. Preheat the oven to 350°F. Line a baking sheet with parchment paper.
2. In a large mixing bowl, combine the nut butter, honey or maple syrup, mashed bananas, and vanilla. Set aside.
3. In a separate mixing bowl, combine the rolled oats, salt, cinnamon, shredded coconut, chopped nuts, chocolate chips and dried fruit.
4. Add the wet ingredients to the bowl of dry ingredients and stir everything with a large spoon to form the dough.
5. Use a cookie scoop or two spoons to scoop and form twelve dough balls on the baking sheet. Use the back of a spoon to flatten each cookie slightly, since they won’t flatten or spread much in the oven.
6. Bake for 12 - 18 minutes, until the edges of the cookies are golden brown.
7. Let cook for at least 10 minutes, then enjoy!
