These waffles are great for a weekend treat or to freeze and reheat for a quick breakfast during the week.
The base of these waffles is made from gluten-free, grain-free banana flour which is an awesome alternative to nut flour if you're looking to mix up your gluten free baking! Banana flour is made from green bananas which has a very mild banana flavor. It's nutty and a little bit earthy. The texture is light and fluffier than a wheat flour or nut flour. It blends well with other ingredients, especially in baked good recipes, so you could experiment with it in other recipes!
Okay back to these waffles. After they are done cooking, my favorite way to top my waffles is with drizzles of maple syrup and Almond Cashew Super Butter!

Ingredients -- make 4 mini waffles
1/2 cup + 2 tbsp banana flour
1/2 tbsp baking powder
Pinch of salt
1.5 tbsp melted coconut oil
2 tbsp Wild Friends Almond Cashew Super Butter
1 tbsp coconut sugar (optional)
1/2 cup almond milk
Directions:
Preheat your waffle iron. Add dry ingredients to a mixing bowl, followed by wet ingredients and stir. Spoon batter into your waffle iron, following its instructions. Enjoy!
